Rustic Lentil Soup with Olive Oil

Overview
Lentil soup is a staple dish across Greece — simple, nourishing and full of flavour.
The final drizzle of olive oil brings the dish together.
Ingredients
- 250g lentils

1 onion, chopped
- 2 garlic cloves
-
1 carrot, diced
- 2 tbsp tomato paste
- 1 bay leaf
- Salt and pepper
- Fresh parsley
- 4–5 tbsp Ionian Gold Extra Virgin Olive Oil
Method
1. Rinse lentils thoroughly.
2. Sauté onion, garlic and carrot in olive oil.
3. Add lentils, tomato paste, bay leaf and water.
4. Simmer for 30–40 minutes until tender.
5. Season to taste.
6. Serve with chopped parsley and a drizzle of Ionian Gold olive oil.

Always add olive oil both during cooking and again when serving.
