Overview

Gemista, meaning 'stuffed', is one of Greece’s most traditional home-cooked dishes.
Vegetables are filled with fragrant rice, herbs and olive oil, then baked until tender.

Ingredients

  • 4 large tomatoes
  • 3 bell peppers
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 garlic cloves
  •  ½ cup chopped parsley
  •  ½ cup grated tomato
  • Salt and pepper
  • 6–8 tbsp Ionian Gold Extra Virgin Olive Oil

Method

1.     Cut the tops off tomatoes and peppers and scoop out the centres.

2.     Sauté onion and garlic in Ionian Gold olive oil.

3.     Add rice, grated tomato, parsley, salt and pepper.

4.     Fill the vegetables with the mixture.

5.     Place in a baking tray and drizzle generously with olive oil.

6.     Bake at 180°C for 60–70 minutes.

Ionian Gold Tip

Add extra olive oil before baking to keep the vegetables soft and full of flavour.
